Sheila’s Homemade Peanut Brittle


 

Ingredients:

 

-2 cup sugar

-1 cup light corn syrup

-1/2 cup water

-1 cup butter

-2 cups raw peanuts

-1 tsp baking soda

-candy thermometer

 

Mix sugar, water, and corn syrup together.  When the mixture begins to boil then add the butter, stirring constantly.   When it get to 280º add peanuts, continue stirring.  It’s done at 305º, so rremove it from the heat and stir in the baking soda.  Pour on lightly buttered surface, like a marble board, large cookie sheet, etc. Do not use countertop, the extreme heat will melt most countertop finishes.

 

After about 3-5 mminutes turn it over.  When it has cooled simply break into pieces of any size you want.
